Innovative technologies of food products obtained by spherification

The purpose of the project– theoretical and experimental study of scientific principles of spherificationof unipolar and heteropolar food systems in headend mediums on the base of aqueous solutions of blocking natural and technological origin electrolytes to produce a wide range of encapsulated and granulated foodstuffs, development and industrial implementation of technologies for food extrusion molded in the form of capsules and granules, and equipment for its industrial, scientific and practical recommendations for production management and quality assessment of new products

The authors on the base of theoretical and experimental studies definedscientific principles of spherification of unipolar and heteropolar food systems in headend mediums on the base of aqueous solutions of blocking natural and technological origin electrolytes with obtaining encapsulated and granulated food products.

Scientific basisof spherificated food products technology based on the extrusion forming of fluid receipt mixtures in the medium of ionotropic polysaccharideis developed. Implementation of these technologies will develop a wide range of competitive products with high consumer properties for diverse population of Ukraine.

The complex of scientific, technological, engineering, planning, and organizational works on the introduction of the developed technologies and equipment in catering business and food industry enterprises, educational process in Ukraine universities is implemented.

Scientifically based technologies of spherificated food products in the form of encapsulated oils, tomato sauces, juices and balsamic vinegars, dessert products with use of granules containing lacto-calcium of dairy raw materials, new types of equipment and principles of production processes management are introduced.

Economic effect of the implementationis the establishing and functioning of a new production enterprise «Сapsular»Ltd (town Derhachi), the implementation of which allows organizing about 100 jobs, it produces food products for the market of Ukraine and exports spherificated food products to the USA, Spain, Bulgaria, Israel, etc.

The total number of publications are99, including 3 monographs, 1 encyclopedia, 1 collective monograph, 27 articles (including 7 in the journals from international scientometric databases, 2 articles are published in foreign editions), 43 abstracts, 12 regulatory documents. The total number of references to the publications of authors is 28 (according to the Google Scholar database), h-index = 2. 12 patents protect novelty and competitive technical solutions.
